Several cooking schools have arrived around the Emerald Isle (see Irish Castle Cooking Schools) for vacationers seeking a fresh kitchen approach to take home, along with the memories of beautiful Irish countryside. The Irish term is cookery, denoting a craft and art, more than just a function.

His Tannery Restaurant in Dungarvan, the coastal village in the southeast corner of Ireland, Waterford County, has been voted best restaurant in the region for multiple years. The Tannery Restaurant, taking its name from the former leather factory a block from the Dungarvan Harbor, where it now invites to a warm crisp interior to complement Flynn’s crisp and clean innovative cooking, first opened in 1997. Paul and his wife Máire opened the boutique B&B style accommodations of the Tannery Townhouse in 2005 and shortly thereafter the Tannery Cookery School on the ground floor of the townhouse.

The school is perhaps more a demonstration kitchen of green and white décor with ultramodern stovetops and ovens, and an HD internal television system for following Paul’s step by step maneuvers. The school kitchen has workspaces for twelve to follow hands-on. The food cooked in the school kitchen is served at Chef's table in a 1930’s style French chateau inspired dining room just a step away from the kitchen. The freshness of the Tannery’s cooking comes from the walled garden behind the school where the greens and produce are grown and fresh picked for the menu.

Tannery Townhouse Room Interior photoThe courses offered at the Tannery Cookery School are mostly one or two day exploratory and demonstration cooking experiences for the casual cook or aspiring professional, whether to refine cooking skills, learn new techniques or just build confidence in the kitchen, rather than in-depth chef training. A number of packages are offered at the Tannery including stays in the en suite luxurious rooms of the Tannery Townhouse combined with cooking theme courses, from romantic couples getaway, to individuals and group events. The cozy accommodations in the period townhouse begin at a bargain 55€ per person, with standard and superior. There are two styles of townhouse rooms, more subdued and sedate and a little bit whimsical. Take your pick.

Cooking Classes Ingredients photoThe Tannery Cookery School courses are held throughout the year with familiar guest chefs sometimes joining Paul for his classes. The course themes range from A “Weekend at Home”, “The Spirit of Spain” and “France Vs. Italy”, “Stunning Seafood” and “Market Gardening”. One and two day cooking course prices range from 45€ to 195€. The Tannery Townhouse and the Cookery School are located just around the corner from the Tannery Restaurant, where the full effect of Paul Flynn’s cooking can add to the in-kitchen experience.
