Not far from the famous Black Forest resort of Baden-Baden (see Friedrichsbad) on a small industrial street in the little village of Appenweier, a suburb of Oberkirch is the “factory” home of Gmeiner Confectionery Company which opens its doors to the secrets to the art of chocolate and pastry to the public through seminar classes at the headquarters. This long standing family chocolate maker which first opened in 1898 has been creating gourmet sweet treats for over 100 years. Today the company, under the guidance of Volker Gmeiner, carrying on the family tradition, as well as one of Europe’s top rated confectionary chefs, operates a collection of their own branded café sweet shop Patisseries around Germany, in Oberkirch, Offenburg, Freiburg, Baden-Baden and Stuttgart, and supply desserts and chocolate products to customers across Europe.
The Seminar classes, lasting for three hours for groups of about fifteen are held on scheduled dates and cover four basic themes, Pastry Basics, Chocolate Making, Truffle and a Large Roll recipe, Finger Food desserts and Star Desserts from Crème Brulee to Parfait. Each class includes a champagne reception, a recipe book to take home, along with a Gmeiner Apron and a Certificate of Course Completion. But perhaps the biggest star of the shop is Volker’s own award winning version of his family’s traditional recipe Black Forest Cake.
The Black Forest Cake name is a bit misleading as the cake is really a torte, consisting of layers of chocolate cake, whipped cream, cherries and chocolate shavings, with the English French hybrid name of Black Forest Gateau (Forêt-Noire Gateau), or the completely German, Schwarzwalder Kirschetort (Black Forest Cherry Torte), though rather than from the location of its inception, the name really derives from the liqueur made from the cherries which are grown in the mountains of southwest Germany, the Schwarzwalder Kirshwasser, which provides its special flavor. Follow the step by step techniques of baking craft hand-made layering, the perfect consistency of the cream, the fresh cherries and Kirsch liqueur.
